Soft Serve Ice Cream

Soft serve ice cream is a great profit center for your restaurant or shop. Ice cream ingredients vary among the various suppliers, but one of the most common metric is butterfat. Soft serve can range from 3%-10% butterfat.

Along with butterfat, overrun is another important factor in your ice cream. Overrun is essentially a measurement of how much air is incorporated into the mix to make the final product. The more overrun, the less mix it will take to make the final product. For instance, 10 gallons of mix with a 50% overrun will make 15 gallons of final product. Remember the more overrun, the more additional flavoring will be required to maintain the desired taste.

Milkshakes

Milkshakes are a great dessert option to add to a menu and it can really drive sales to your place of business. Much like soft serve cones and bowls, milkshakes have a base mix that can range from 5-10% butterfat. Generally, milkshakes are made with a base flavor ice cream, like vanilla. Unlike the conventional method of scooping hard ice cream and blending it with milk, an ElectroFreeze® shake freezer just requires pouring the mix into the top and let the freezer do the rest. Once the mix is frozen down, the operator would dispense out the front and then add mix-ins.

In addition to the freezer, ElectroFreeze® has a front mounted blender option for the front of the shake freezers. This allows the operator to make a variety of different shakes. Slush

Frozen slush beverages are a great menu option as a refreshing beverage to cool off your customer while boosting your profits. The classic frozen slush beverage is made up of water, sugar, and flavoring. Along with the classic frozen slush beverages, operators also add alcohol to the slush making for delicious frozen margaritas and daiquiris. Other delicious and profitable beverages are frozé (frozen wine), frozen sangria, frozen mojitos, frozen lemonade, and frozen cappuccinos.

When making slush, the most important factor will be the amount of sugar that is used in the mix. Sugar is the ingredient that allows for the mix to freeze properly. Too much sugar the mix will have issues freezing down to the right firmness, too little sugar and the mix will freeze solid. In addition, there are various stabilizers and add ins that can compensate with the sugar to achieve the desired texture or firmness. In addition if you are adding alcohol, the mix will require lower freezing temperatures to ensure the alcohol infused mix freezes properly.
